Ingredients
- Cantelope melon
- Cucumber
- Cherry tomatoes
- Fresh mint
- Goat's cheese, crumbly
- 1/8 cup olive oil
- 1/2 Tbsp red wine vinegar
Directions

Slice melon and cucumber in long pieces

Halve the cherry tomatoes

Tear the mint leaves

Combine melon, cucumber, tomatoe and mint

Combined oil, vinegar and S&P to taste

Toss

Crumble cheese on top
