Lemon-Caper Vinaigrette

Ingredients

  • 1/4 cup olive oil
  • 3 tbsp. sliced almonds
  • 1 1/2 tbsp. drained nonpareil capers, chopped
  • 1/2 tsp lemon zest plus 2 tbsp. fresh juice
  • 1 tbsp. finely chopped fresh chives
  • 1/4 tsp crushed red pepper

Directions

  1. Combine oil and almonds in a small nonstick skillet over medium, and cook, stirring often, until lightly toasted, about 2 minutes. Transfer to a small bowl; let cool 5 minutes. Stir in capers, lemon zest and juice, chives and crushed red pepper.
