Ingredients

  • 3/4 cup chopped drained kimchi
  • 3 tbsp. mayo
  • 1 1/2 lbs. ground beef
  • 2 garlic cloves, finely grated
  • 2 tbsp. light brown sugar
  • 1 tbsp. soy sauce
  • 1 tbsp. toasted sesame oil
  • Kosher salt and black pepper
  • Vegetable oil, for the grill
  • 4 sesame buns, split
  • Half-sour pickle chips and/or sweet potato chips, for serving

Directions

  1. Preheat a grill to medium high. Mix the kimchi and mayo in a small bowl; set aside. Combine the ground beef, garlic, brown sugar, soy sauce, sesame oil, 1 tsp salt and black pepper in a medium bow. Form the beef into 4 patties, about 4 inches wide and 3/4 inch thick.

  2. Oil the grill grates. Add the patties and cook until marked on the bottom and starting to cook up the sides, about 3 minutes. Flip and cook 3 to 4 more minutes for medium rare.

  3. Toast the buns on the grill. Transfer the burgers to the bun bottoms. Top with the kimch mayo, pickles and bun tops. Serve with chips.
