- 3 tbsp. lime juice
- 2 tsp chipotle hot sauce
- 2 tsp agave
- 1/2 tsp kosher salt
- 1/4 cup olive oil
- 1 1/2 cups cooked white rice
- 1 chopped romaine heart
- 3 chopped scallions
- 1 cup halved cherry tomatoes
- 1/2 cup crumbled queso fresco
- 1/4 cup toasted pepitas
Directions

Whisk lime juice with hot sauce, agave, and salt in a large bowl. Whisk in olive oil. Add rice, romaine, scallions, tomatoes, queso fresco and pepitas.
