Ingredients
- 12 oz. trimmed mixed mushrooms
- Olive oil
- Salt and pepper
- Peppadew peppers
- 4 scallions
- 3 tbsp. olive oil
- 3 tbsp. chopped parsley
- 2 tbsp. red wine vinegar
Directions

Toss mushrooms with olive oil, salt and pepper. Thread onto 4 skewers, alternating with Peppadew peppers. Grill over medium heat, turning, until tender, 10-12 minutes. Grill scallions, then chop and whisk with olive oil, parsley, vinegar and 1 tbsp. chopped Peppadews. Drizzle over kebabs.
