Corn-Avocado Salad

Ingredients

  • 3 tbsp. white wine vinegar
  • 1 tbsp. water
  • 1 tsp honey
  • 1/2 tsp kosher salt
  • 1/2 thinly sliced red onion
  • 4 ears corn
  • 2 chopped tomatoes
  • 1 diced avocado
  • 2 tbsp. chopped parsley

Directions

  1. Whisk vinegar, water, honey and kosher salt in a large bowl. Add onion and toss; let sit, stirring occasionally, 20 minutes. Brush corn with vegetable oil and grill over medium-high heat until charred, 8 minutes. Let cool, then cut off the kernels. Add to the onion along with tomatoes, avocado and parsley; toss. Season with salt and pepper.
