Ingredients
- 3 tbsp. white wine vinegar
- 1 tbsp. water
- 1 tsp honey
- 1/2 tsp kosher salt
- 1/2 thinly sliced red onion
- 4 ears corn
- 2 chopped tomatoes
- 1 diced avocado
- 2 tbsp. chopped parsley
Directions

Whisk vinegar, water, honey and kosher salt in a large bowl. Add onion and toss; let sit, stirring occasionally, 20 minutes. Brush corn with vegetable oil and grill over medium-high heat until charred, 8 minutes. Let cool, then cut off the kernels. Add to the onion along with tomatoes, avocado and parsley; toss. Season with salt and pepper.
