Ingredients
- 4 medium sweet onions, like Vidalia or Maui
- 2 tsp olive oil
- Fleur de sel or coarse sea salt to taste

Preheat the charcoal grill.

Leaving the skins on the onions, rub them lightly with the oil and place on the cooking grate of the grill over indirect medium heat. Grill for 1 1/2 to 2 hours, depending on their size. Check the onions periodically and remove when you can see the dark onion juices bursting through the skins. When cool enough to touch, remove the skin and sprinkle with salt.
