Chimichurri Sauce

Ingredients

  • 3 cups lightly packed chopped fresh parsley, stems removed
  • 2 garlic cloves, minced
  • 1/4 tsp red pepper flakes
  • 2 tbsp. minced shallot or onion
  • 1/2 cup olive oil
  • 1 tbsp. sherry vinegar or red wine vinegar
  • 1 tbsp. fresh lemon juice
  • Kosher salt and black pepper, to taste

Directions

  1. In a food processor or blender, combine the parsley, minced garlic, red pepper, shallot, olive oil, vinegar, lemon juice, and salt and pepper to taste. Pulse until well chopped, but not pureed. Reserve for topping.
