Achiote Seasoning

Ingredients

  • 3 tbsp. annatto seeds
  • 2 tbsp. dried oregano
  • 2 tbsp. cumin seeds
  • 1 tbsp. coriander seeds
  • 1 tbsp. black peppercorns
  • 6 cloves
  • 1 tbsp. ground allspice
  • 1/2 tbsp. ground cinnamon

Directions

  1. Grind the annatto seeds to a spice grinder until reduced to a powder. Toast oregano, cumin, coriander, peppercorns, and cloves. Let cool. Add toasted spices, allspice, and cinnamon to annatto and grind together to form a powder. Use 2 tbsp. per 4 servings of meat. Rub on pork chops up to 4 hours in advance of grilling and chicken wings up to 8 hours in advance.
