Ingredients

  • 3 tbsp. cardamom pods
  • 2 1/2 tbsp. cumin seeds
  • 2 tbsp. coriander seeds
  • 1 1/2 tbsp. black peppercorns
  • 1 tbsp. cloves
  • 2 tsp ground cinnamon
  • 1 tsp grated nutmeg

Directions

  1. Lightly crush cardamom pods. Discard skins and reserve seeds. Toast cardamom seeds, cumin, coriander, peppercorns, and cloves. Let cool. Crush toasted spices to a powder. Blend with cinnamon and nutmeg. Use 2 tbsp. per 4 servings. Rub on to pork chops up to 8 hours in advance of grilling, chicken breasts up to 4 hours in advance.
