Ingredients
- 4- 6 oz. tenderloin steaks, 2 inches thick
- 1 tbsp. olive oil
- 1 tsp black pepper
- Salt
- 1 recipe salsa verde (see recipe)
Directions

Tie a piece of string around the middle of each steak to ensure a neat shape and even cooking. Rub steaks with oil and pepper. Grill over hot coats for 3 minutes per side for rare and 4 minutes per side for medium rare. Sprinkle with salt and let rest for 5 minutes. Cut string and remove. Serve warm, topped with salsa verde.
