Cilantro Beef Satays with Honey Tamarind Glaze

Ingredients

  • 1 lb. ground chuck steak
  • 2 tbsp. grated fresh ginger
  • 2 garlic cloves, crushed
  • 1 onion, grated
  • 1 handful cilantro leaves
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cardamom
  • 2 tsp salt
  • 1/2 tsp black pepper
  • For Glaze:
  • 1 tbsp. grated fresh ginger
  • 1 garlic clove, crushed
  • 1 1/2 tbsp. tamarind paste
  • 1 1/2 tbsp. honey
  • Salt and black pepper, to taste

Directions

  1. Place ground steak, ginger, garlic, onion, cilantro, ground coriander, turmeric, chili powder, cumin, cardamom, salt and pepper in a food processor; pulse until combined. Divide into 8 equal-sized portions. With wet hands, mold each portion around a skewer, shaping it into a sausage, about 8 inches long.

  2. For glaze, combine ginger, garlic, tamarind, and honey. Grill over medium-hot coals, brushing with glaze, turning every 2 minutes, until well browned but still juicy and slightly pink inside, 8-10 minutes. Sprinkle with salt and pepper. Serve hot.
