Ingredients
- 1 lb. ground lamb
- 1 onion, grated
- 1/2 tsp black pepper
- 1 1/2 tsp salt
- 1 recipe charmoula (See recipe)
- 1 recipe spiced chickpea sauce (see recipe)
Directions

Place lamb, onion, black pepper, salt and charmoula in a food processor; pulse until combined. Divide into 8 equal-sized portions. With wet hands, mold each portion around a skewer, shaping it into a sausage, about 6 inches long. Grill over medium-hot coals, turning every 2 minutes, until well browned but still juicy and slightly pink inside, 8-10 minutes. Sprinkle with salt and pepper. Serve hot with spiced chickpea sauce.
