Zucchini Casserole

Ingredients

  • 3 medium zucchini, sliced (6 1/2C)
  • olive oil
  • 1 medium onion, sliced
  • 1 minced garlic clove
  • 1 28 oz can tomatoes or fresh
  • 1 T fresh, minced basil
  • 1/2 t dried oregano
  • 1/4 t pepper
  • 1 1/2 C stuffing mix
  • 1/2 C grated parmesan
  • 3/4 C grated mozzarella

Directions

  1. Cook zucchini in oil until tender-set aside

  2. saute onion & garlic in oil

  3. add tomatoes & seasonings

  4. cook 10 minutes

  5. add zucchini

  6. place in baking dish

  7. top with stuffing

  8. sprinkle with parmesan

  9. cover & bake 20 minutes @ 350F

  10. top with mozzarella and bake 10 minutes
