Asian Spiralized cucumber salad

Serves 4 people

Ingredients

  • 2 large cucumbers
  • 1 scallion,sliced
  • 2 TBSP cilantro, chopped
  • 3 TBSP rice vinegar
  • 1 1/2 TBSP soy sauce
  • 1 1/2 TBSP sesame oil
  • 1 tsp honey
  • 1/4 tsp chili flakes
  • Toasted sesame seeds, for garnish

Directions

  1. Spiralize the two cucumbers and place in a large bowl. Toss with scallion and cilantro.

  2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, chili flakes.

  3. When ready to eat drizzle dressing over cucumbers and toss to combine.

  4. Garnish with sesame seeds

  5. Be sure to make RIGHT BEFORE serving or salad will get watery from the cucumbers.
