Quick Kimchee Coleslaw

Ingredients

  • 1/2 small head napa cabbage, cored and shredded
  • 2 medium carrots, peeled and cut into thin shreds with a vegetable peeled
  • 1/4 cup chopped kimchee
  • 2 tbsp. unseasoned rice vinegar
  • 1 tsp salt
  • 1 tsp granulated sugar
  • 1 tsp chopped fresh cilantro
  • 1 tsp toasted sesame oil
  • Chopped roasted peanuts or cashews, for garnish

Directions

  1. Combine all ingredients except the peanuts in a large bowl, cover, and refrigerate until ready to use.

  2. Garnish with the roasted peanuts, and serve.
