Smoked Mushrooms

Ingredients

  • 1 lb. mixed fresh mushrooms, such as button, shiitake, oyster, cremini, and/or chanterelle, trimmed and cleaned
  • 3 tbsp. olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 sprigs fresh thyme

Directions

  1. In a large bowl, combine all the ingredients and mix well.

  2. Prepare a stovetop smoker as directed with the wood chips. Place the mushrooms on the grill pan and partially cover the smoker, leaving the lid askew by 1 inch. Place over medium-high heat. When it begins to smoke, close the lid completely and cook until the mushrooms are tender and completely smoked, about 10 minutes.

  3. Turn off the heat and let the mushrooms absorb the remaining smoke for 5 minutes longer.

  4. Remove the mushrooms from the smoker and discard the thyme.
