Super-Quick Cabbage with Bacon

Ingredients

  • 1/2 lb. sliced bacon, cut across into 1/2-inch strips
  • 1 large head green cabbage, cored and coarsely shredded
  • 1 large yellow onion, halved and thinly sliced lengthwise
  • 2 tbsp. olive oil
  • 1 1/2 tsp salt
  • 3/4 tsp black pepper

Directions

  1. Place the bacon in a microwavable bowl and cook, stirring every 90 seconds, until crispy, about 7 minutes total. Remove from the microwave and, using a slotted spoon, transfer the crispy bacon to paper towels to drain. Reserve about 1/4 cup of the drippings and save any remaining drippings for later use.

  2. Combine the cabbage and onion in a large microwavable bowl, drizzle with the reserved bacon drippings and the oil, and sprinkle with the salt and pepper. Toss well to combine. Cover the bowl tightly with plastic wrap and microwave for 4 minutes, undisturbed.

  3. Remove the bowl from the microwave, uncover, and stir well to combine. Add the crispy bacon to the bowl, stir, and serve.
