Ingredients
- 6 cups baby arugula
- 3 cups diced seedless watermelon
- 1 cup tomatoes, cut into halves, quarters, or wedges
- 1/2 cup thinly sliced sweet onion
- 1 tbsp. fresh basil chiffonade
- 1 tbsp. fresh mint, chiffonade
- Fresh Herb and Red Wine Vinaigrette (see recipe)
- 8 oz. ball burrata cheese, divided into 4 to 6 pieces
- Sea salt and black pepper
- Olive oil, for drizzling
Directions

In a large bowl, combine the arugula, watermelon, tomatoes, onion, and herbs. Toss the salad with all of the vinaigrette.

Divide the salad among 4 to 6 salad plates. Place the burrata on top of each, season with salt and pepper to taste, and give each salad a drizzle of oil. Serve immediately.
