Ingredients
- 1 thinly sliced red onion
- 3 tbsp. cider vinegar
- 1 tsp sugar
- 1 1/3 cups reserved pork and sauce from Instant Pot Chilorio (see reipce)
- 1 avocado
- 4 toasted buns
Directions

Stir together red onion, vinegar, and sugar in a small bowl. Let stand at least 1 hour. Drain. Reheat reserved pork and sauce, covered, in a 2-qt. saucepan over medium heat, 5-7 minutes. Mash avocado and spread on bottom half of buns. Top each bun with 1/3 cup pork and sauce and red onion mixture.
