Herb Roasted Carrots

Ingredients

  • 2 lbs. carrots, peeled and roughly chopped
  • 1 garlic clove, minced
  • 1 tbsp. chopped fresh thyme
  • 1 tbsp. olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Directions

  1. Preheat oven to 375. Line a large rimmed baking sheet with parchment paper.

  2. In a large bowl, stir together all ingredients. Place carrots in an even layer on prepared pan.

  3. Bake until tender, about 25 minutes.
