Ingredients
- 2 lbs. carrots, peeled and roughly chopped
- 1 garlic clove, minced
- 1 tbsp. chopped fresh thyme
- 1 tbsp. olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Directions

Preheat oven to 375. Line a large rimmed baking sheet with parchment paper.

In a large bowl, stir together all ingredients. Place carrots in an even layer on prepared pan.

Bake until tender, about 25 minutes.
