Ingredients
- 1 lb. Yukon Gold potatoes, quartered and peeled
- 2 center-cut bacon slices
- 1 cup chopped leeks
- 1/4 cup whole milk
- 3 tbsp. sour cream
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 tbsp. chopped fresh chives
Directions

Cook potatoes in simmering water until tender, 20 minutes. Cook bacon in a skillet over medium high until crispy. Remove and crumble bacon; add leeks to skillet. Reduce heat to medium low; cook 8 minutes. Drain potatoes; mash with milk, sour cream, salt, pepper, and leeks. Top with chives and crumbled bacon.
