Ingredients
- 2 tbsp. olive oil
- 2 cups halved Brussel sprouts
- 2 cups sliced cremini mushrooms
- 1 tsp minced garlic
- 1 tsp fresh thyme
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 2 tbsp. panko
- 1 tbsp. white wine vinegar
- 1/4 cup grated Parmesan
Directions

Heat olive oil in a large skillet over high. Add Brussels sprouts; cook until browned, 3-4 minutes. Add mushrooms; cook until tender, 3-4 minutes. Stir in garlic, thyme, salt and pepper; cook 1 minute. Remove from heat. Stir in panko and vinegar; top with Parmesan.
