Cheesy Brussels Sprouts and Mushrooms

Ingredients

  • 2 tbsp. olive oil
  • 2 cups halved Brussel sprouts
  • 2 cups sliced cremini mushrooms
  • 1 tsp minced garlic
  • 1 tsp fresh thyme
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp. panko
  • 1 tbsp. white wine vinegar
  • 1/4 cup grated Parmesan

Directions

  1. Heat olive oil in a large skillet over high. Add Brussels sprouts; cook until browned, 3-4 minutes. Add mushrooms; cook until tender, 3-4 minutes. Stir in garlic, thyme, salt and pepper; cook 1 minute. Remove from heat. Stir in panko and vinegar; top with Parmesan.
