Thyme Cornbread Muffins with Thyme Butter

Ingredients

  • 2 (6-oz.) packages buttermilk cornbread mix
  • 8.5 oz. box corn muffin mix
  • 1 2/3 cups whole milk
  • 1 large egg
  • 2 tbsp. chopped fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Thyme Butter (see recipe)

Directions

  1. Preheat oven to 425. Spray 18 muffin cups with baking spray with flour.

  2. In a large bowl, stir together cornbread mixes, milk, egg, thyme, salt and pepper. Spoon batter into prepared muffin cups, filling two-thirds full. Sprinkle with thyme.

  3. Bake until golden brown and a wooden pick inserted in center comes out clean, 12-15 minutes. Serve with Thyme Butter.
