Ingredients
- 2 tbsp. olive oil
- 4 bone-in pork rib chops
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp ground sage
- 1/4 cup chopped fresh sage
- 1/4 cup sorghum syrup
- 2 garlic cloves, sliced
- 2 tbsp. unsalted butter
- Garnish: fresh sage leaves

Preheat oven to 425.

In a 12-inch cast-iron skillet, heat oil over medium-high heat. Pat pork chops dry. Sprinkle with salt, pepper, and ground sage. Add pork chops to skillet; cook, turning every minute, until deep golden brown. Remove from heat; add fresh sage, sorghum syrup, and garlic.

Bake until cooked through, about 10 minutes. Remove from oven; add butter to skillet, turning chops to coat. Let rest for 5 minutes. Serve pork with pan drippings. Garnish with sage.
