Biscuit Pepperoni Pizzas

Ingredients

  • 16.3 oz. can refrigerated flaky layer biscuits
  • 1/4 cup salted butter, melted
  • 1 garlic clove, grated
  • 1 medium zucchini, thinly sliced
  • 1/2 cup grated fresh Parmesan
  • 1/3 cup miniature pepperoni
  • Quartered grape tomatoes
  • Garnish: fresh thyme leaves

Directions

  1. Preheat oven to 400. Line a baking sheet with parchment paper.

  2. On prepared pan, flatted biscuits into 3 1/2 inch circles.

  3. In a small bowl, combine melted butter and garlic. Brush onto biscuits. Top each biscuit with 3 to 4 zucchini slices.

  4. Bake for 10 minutes. Remove from oven; brush with remaining garlic butter, and sprinkle with cheese. Bake for 5 minutes more.

  5. Line a microwave-safe plate with paper towels, and place pepperoni on plate. Microwave for 15 seconds to warm; pat dry. Top pizzas with pepperoni and tomatoes. Garnish with thyme.
