Ingredients
- 1 1/2 lbs. sweet potatoes, cut into 1-inch pieces
- 2 tbsp. olive oil
- 1 tsp chili powder
- 1 tsp kosher salt
- Black pepper
- 1/4 cup warm water
- 1 garlic clove, minced
- Juice of 1 lime
- 2/3 cup cilantro
- 3 tbsp. sunflower seed butter
- 1/4 tsp kosher salt
Directions

Toss sweet potatoes with olive oil, chili powder, salt and pepper. Spread on a baking sheet and bake at 450, stirring halfway through, until crisp, 35 to 45 minutes. Puree water, garlic, lime juice, cilantro, sunflower seed butter and kosher salt in a blender. Serve with the potatoes.
