Grilled Sausages, Potatoes, and Carrots with Salsa Verde

Ingredients

  • 8 fresh sweet or hot Italian pork sausages
  • 1 bunch carrots (about 1 lb.), trimmed and peeled, halved lengthwise is large, plus greens reserved
  • 1 1/2 lb. red potatoes (about 4 medium), cut into 3/4-inch thick wedges
  • 3/4 cup olive oil
  • 3 tbsp. chopped fresh basil
  • 1 garlic clove, chopped

Directions

  1. Heat a grill over medium-high. Cook the sausages, turning occasionally, until cooked through, about 20 minutes. Let cool. Halve the sausage crosswise.

  2. In a large bowl, toss the peeled carrots and the potatoes with 1/4 cup oil; season with salt and pepper. Grill until tender, about 20 minutes for the carrots and about 25 minutes for the potatoes.

  3. Meanwhile, chop enough of the carrot greens to measure 3 tbsp. In a food processor, puree the carrot greens, basil, garlic, and the remaining 1/2 cup oil until smooth, about 1 minute. Season the salsa verde.

  4. Arrange the sausages, carrots, and potatoes on a platter. Top with half the salsa verde. Serve with the remaining salsa verde.
