Ingredients
- 8 fresh sweet or hot Italian pork sausages
- 1 bunch carrots (about 1 lb.), trimmed and peeled, halved lengthwise is large, plus greens reserved
- 1 1/2 lb. red potatoes (about 4 medium), cut into 3/4-inch thick wedges
- 3/4 cup olive oil
- 3 tbsp. chopped fresh basil
- 1 garlic clove, chopped

Heat a grill over medium-high. Cook the sausages, turning occasionally, until cooked through, about 20 minutes. Let cool. Halve the sausage crosswise.

In a large bowl, toss the peeled carrots and the potatoes with 1/4 cup oil; season with salt and pepper. Grill until tender, about 20 minutes for the carrots and about 25 minutes for the potatoes.

Meanwhile, chop enough of the carrot greens to measure 3 tbsp. In a food processor, puree the carrot greens, basil, garlic, and the remaining 1/2 cup oil until smooth, about 1 minute. Season the salsa verde.

Arrange the sausages, carrots, and potatoes on a platter. Top with half the salsa verde. Serve with the remaining salsa verde.
