Caprese Combos

Ingredients

  • 1 lb. fresh mozzarella, cut into 16 slices
  • Layer ingredients:
  • 16 slices of ripe peaches, fresh tarragon leaves
  • 16 thin slices of peeled seedless watermelon wedges, 16 small radicchio leaves
  • 16 slices of heirloom tomatoes
  • 16 slices of fresh mango
  • 16 slices of zucchini, cut on a sharp angle, then grilled, 16 slices of oil-packed roasted red peppers from a jar
  • 16 thin slices of peeled cantaloupe, arugula leaves, tossed in olive oil
  • Finishing Ingredients:
  • White balsamic vinegar, olive oil
  • Celery leaves, chopped red onion, olive oil, lime zest
  • Fresh micro basil or baby basil leaves, black olive tapenade, black pepper, olive oil
  • Cilantro sprigs, cilantro oil, cayenne or chilelimon seasoning
  • Chopped fresh chives, chive oil, black pepper
  • Crispy prosciutto

Directions

  1. First choose your twist. On a platter, alternate the cheese with the layering ingredients. Top with the finishing ingredients and a little flaky sea salt.
