Ingredients
- 3 lb. zucchini, ends trimmed
- 1/4 cup butter, softened
- 3 garlic cloves, minced
- 1 1/2 tbsp. chopped fresh parsley
- 1 tbsp. olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded Parmesan cheese

Preheat an outdoor grill to medium-high heat.

Slice zucchini lengthwise into 1/2-inch thick planks. Stir together butter, garlic and parsley in a small bowl.

Brush each side of zucchini planks with oil; sprinkle with salt and pepper. Grill zucchini until grill marks form, 2 to 3 minutes. Flip zucchini; spread with butter mixture, then sprinkle with cheese. Grill until grill marks form, cheese has melted, and zucchini is tender, 2-3 minutes more.
