Ingredients
- 1 lb. cucumbers, halved lengthwise and sliced 1/4-inch thick
- 1 to 2 fresh red chile peppers, seeded and thinly sliced
- 1/4 cup rice vinegar
- 1/4 cup sugar
- 2 tbsp. sesame oil
- 1 tbsp. minced fresh ginger
- 1 tbsp. minced garlic
- 1 tbsp. sesame seeds
- 1/2 tsp salt
Directions

Stir together cucumbers and chile peppers in a bowl. Whisk together vinegar and sugar in another bowl until sugar dissolves. Stir in remaining ingredients. Drizzle over vegetables and toss to coat.
