Grilled Corn Salad with Basil Pesto

Ingredients

  • 8 ears fresh sweet corn
  • 3/4 cup prepared basil pesto
  • 1/4 cup shaved Parmesan
  • 2 tbsp. thinly sliced fresh basil
  • 1/2 tsp lemon zest
  • Black pepper

Directions

  1. Preheat grill to medium-high heat. Grill corn, turning occasionally, until lightly charred, 8-10 minutes. Remove and cool slightly. Cut kernels from cobs.

  2. Stir together corn kernels and pesto in a large bowl or serving dish. Top with cheese, basil, zest, and pepper just before serving.
