Oatmeal Blondies

Ingredients

  • 1 cup butter, at room temp
  • 1 cup packed light brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups rolled oats
  • 1 cup chocolate chips

Directions

  1. Preheat oven to 350. Grease and flour a 9×13-inch baking pan.

  2. Beat butter, brown sugar, and white sugar in a large bowl with an electric mixer until fluffy. Beat in eggs, 1 at a time, and vanilla, beating well after each addition. Stir in flour, baking powder, baking soda and salt. Fold in rolled oats and chocolate chips. Spread into prepared baking pan.

  3. Bake until top is golden brown and edges are puffed, about 23 minutes for soft bars or 28 minutes for firmer bars. Transfer pan to a wire rack and let cool completely. Cut into 24 bars.
