Ingredients
- 4 tbsp. olive oil, divided
- 1 tbsp. chopped fresh oregano
- 2 1/2 tsp kosher salt, divided
- 4 bone-in skin-on chicken breasts
- 28 oz. bag baby red potatoes, halved
- 8 small sweet peppers, seeded and sliced
- 1 large red onion, cut into wedges
- 2 garlic cloves, thinly sliced
- 1 lemon, sliced
- Garnish: chopped fresh oregano
Directions

Preheat oven to 450. Position rack in upper third of oven.

In a large bowl, stir together 2 tbsp. oil, oregano, and 1 tsp salt. Add chicken, stirring until coated. Place in an even layer on a large rimmed baking sheet.

In same bowl, stir together potatoes, sweet peppers, onion, garlic, remaining 2 tbsp. oil, and remaining 1 1/2 tsp salt. Place in an even layer around chicken.

Bake for 30 minutes. Reduce oven temp to 430; place lemon slices on pan. Bake until chicken is cooked through, about 15 minutes more. Garnish with oregano.
