Greek Chicken and Vegetables

Ingredients

  • 4 tbsp. olive oil, divided
  • 1 tbsp. chopped fresh oregano
  • 2 1/2 tsp kosher salt, divided
  • 4 bone-in skin-on chicken breasts
  • 28 oz. bag baby red potatoes, halved
  • 8 small sweet peppers, seeded and sliced
  • 1 large red onion, cut into wedges
  • 2 garlic cloves, thinly sliced
  • 1 lemon, sliced
  • Garnish: chopped fresh oregano

Directions

  1. Preheat oven to 450. Position rack in upper third of oven.

  2. In a large bowl, stir together 2 tbsp. oil, oregano, and 1 tsp salt. Add chicken, stirring until coated. Place in an even layer on a large rimmed baking sheet.

  3. In same bowl, stir together potatoes, sweet peppers, onion, garlic, remaining 2 tbsp. oil, and remaining 1 1/2 tsp salt. Place in an even layer around chicken.

  4. Bake for 30 minutes. Reduce oven temp to 430; place lemon slices on pan. Bake until chicken is cooked through, about 15 minutes more. Garnish with oregano.
