Spicy Pickled Green Beans

Ingredients

  • 1 lb. green beans, blanched
  • 5 garlic cloves, thinly sliced
  • 2 tsp sugar
  • 2 tsp salt
  • 2 tsp peppercorns
  • 2 dried red chiles
  • 4 sprigs fresh dill
  • 1 tsp coriander seeds
  • 2 cups distilled white vinegar

Directions

  1. Divide all ingredients between two 16 oz. jars with lids.

  2. Screw lids onto jars to seal and shake each 1 minute. Refrigerate at least 3 days before serving; pickled green beans will keep in the fridge up to 1 week.
