“Fake” Pesto

Ingredients

  • 3 oz. assorted herns
  • 1/3 cup olive oil
  • 2 tbsp. cold unsalted butter, cubed
  • 1 tbsp. Parmesan

Directions

  1. In a blender, add the herbs, oil, butter and cheese, and 1-2 ice cubes. Blend until the sauce is emulsified.

  2. Transfer sauce to an airtight container in the coldest part of the fridge to set, at least 30 minutes.
