Apple Cider-Mustard Sauce

Ingredients

  • 2 tsp olive oil
  • 1/3 cup minced shallots
  • 1 tbsp. chopped sage
  • 1 cup chicken stock
  • 1/2 cup apple cider
  • 4 tsp white wine vinegar
  • 1 tbsp. Dijon
  • 2 tsp maple syrup
  • 2 tsp cornstarch
  • 1/2 cup golden raisins
  • 1 tbsp. unsalted butter
  • 1/2 tsp pepper
  • 1/8 tsp kosher salt

Directions

  1. Combine olive oil, shallots and sage in a pan over medium-high; cook 2 minutes. Whisk together chicken stock, apple cider, vinegar, Dijon, maple syrup, and cornstarch; add to pan. Bring to a boil; stir in raisins. Reduce heat; whisk 2 minutes. Stir in butter, pepper and salt.
