Garlic Confit

Spread cloves on grilled bread; marinate olives and feta with garlicky oil; mash cloves into store-bought mayo; stir into mashed potatoes

Ingredients

  • 4 heads garlic, unpeeled, separated cloves
  • small handful of thyme sprigs, rosemary sprigs and/or bay leaves
  • 1 1/2 cups olive oil

Directions

  1. Combine garlic, thyme, rosemary, bay leaves and olive oil in a 8×8-inch baking dish or a small saucepan. Cover with foil and bake in a 250 oven until garlic is very tender, 60-75 minutes. Let cool.
