Ingredients
- 1 lb. fresh or thawed frozen broccoli florets
- 1 lb. fresh or thawed frozen cauliflower florets
- 1/2 cup chopped red bell pepper
- 1/4 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups whole milk
- 3/4 cup shredded smoked Cheddar cheese
- 1 tbsp. Dijon
- 3/4 cup French-fried onions
- 1/4 cup grated fresh Parmesan

Preheat oven to 350. Spray a 2 1/2 -quart baking dish with cooking spray.

Pat broccoli and cauliflower dry with paper towels if using thawed frozen. Place in prepared dish; add bell pepper.

In a medium saucepan, whisk together flour, salt, and pepper; whisk in milk. Bring to a simmer over medium heat, whisking constantly. Reduce heat to medium-low; cook until thickened, about 3 minutes. Remove from heat; add Cheddar and Dijon, whisking until smooth. Pour over vegetables. Sprinkle with French-fried onions and Parmesan.
