Ingredients
- 1 1/2 lbs. French green beans, trimmed
- 4 slices bacon
- 1/4 cup thinly sliced shallot
- 1/4 cup white balsamic vinegar
- 2 tbsp. light brown sugar
Directions

Bring a large pot of water to a boil over medium-high heat; add green beans. When water returns to a boil, immediately drain green beans, and transfer to an ice water bath to stop the cooking process. Place in a serving dish; set aside.

In a medium skillet, cook bacon over medium heat until crisp. Remove bacon, and let drain on paper towels, reserving drippings in skillet.

Add shallot to skillet; cook over medium-high heat for 1 minute. Remove from heat; add vinegar and brown sugar, stirring until sugar is dissolved. Crumble bacon into vinegar mixture; stir well. Pour vinegar mixture over beans; toss gently to coat.
