Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1/2 cup water
- 1 medium sweet onion, chopped
- 2 tbsp. olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp. chopped fresh basil
- 2 tbsp. chopped fresh parsley
Directions

In a large nonstick skillet, place sweet potatoes and 1/2 cup water. Cover and cook over medium-high heat for 10 minutes. Uncover and add onion and oil; cook, stirring frequently, until potatoes and onions are tender, about 10 minutes. Remove from heat; sprinkle with salt and pepper. Toss with basil and parsley just before serving.
