Banana Oat Muffins

Ingredients

  • 1 1/2 cups flour
  • 1 cup rolled oats
  • 1/2 cup white sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 3 bananas, mashed
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1/2 tsp vanilla extract
  • 1 tbsp. coarse sugar

Directions

  1. Preheat oven to 400. Line a 12-cup muffin tin with paper liners.

  2. Stir together flour, oats, white sugar, baking powder, baking soda, and salt in a bowl. Beat egg lightly in a large bowl, then stir in bananas, milk, oil and vanilla until well blended. Stir in flour mixture until just combined. Divide batter among muffin cups and sprinkle with coarse sugar.

  3. Bake until a toothpick inserted into centers comes out clean, 18-20 minutes. Transfer tin to a wire rack. Cool 5 minutes, then remove muffins.
