Pumpkin Mac and Cheese

Ingredients

  • 2 tbsp. butter
  • 2 tbsp. flour
  • 2 cups half-and-half
  • 1/4 tsp each salt and black pepper
  • 1 cup white cheddar cheese
  • 15 oz. can pumpkin
  • 8 oz. cooked elbow macaroni
  • 1/4 cup panko
  • 1/4 cup Parmesan
  • 1/4 cup chopped walnuts

Directions

  1. Melt butter in a saucepan. Stir in flour, half-and-half, and salt and pepper. Cook, stirring, until bubbly, then stir in white cheddar and pumpkin. Stir in macaroni. Transfer to a casserole dish and top with a mixture of panko, Parmesan and walnuts. Bake in a 350 degree oven about 30 minutes.
