Ingredients
- 2 tbsp. butter
- 2 tbsp. flour
- 2 cups half-and-half
- 1/4 tsp each salt and black pepper
- 1 cup white cheddar cheese
- 15 oz. can pumpkin
- 8 oz. cooked elbow macaroni
- 1/4 cup panko
- 1/4 cup Parmesan
- 1/4 cup chopped walnuts
Directions

Melt butter in a saucepan. Stir in flour, half-and-half, and salt and pepper. Cook, stirring, until bubbly, then stir in white cheddar and pumpkin. Stir in macaroni. Transfer to a casserole dish and top with a mixture of panko, Parmesan and walnuts. Bake in a 350 degree oven about 30 minutes.
