Ingredients
- 5 slices bacon
- 2 tbsp. butter
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/4 tsp minced garlic
- 1 1/4 cups leftover mashed potatoes
- 1 cup shredded sharp cheddar cheese
- 3/4 cup flour
- 1 egg, lightly beaten
- 1/4 tsp yellow mustard
- 1/8 tsp black pepper
- 1 dash hot sauce
- 1 tbsp. vegetable oil
- 2 tbsp. sour cream
- Minced fresh chives

Brown bacon in a large skillet over medium-high heat, turning occasionally, about 10 minutes. Drain on paper towels, reserving drippings in skillet. Crumble 2 slices bacon and set aside. Crumble remaining bacon into a large bowl.

Melt butter in skillet with bacon drippings over medium heat. Add onion, celery, and garlic; cook, stirring, until tender and lightly browned, about 15 minutes. Transfer to bowl with bacon. Stir in potatoes, cheese, flour, egg, mustard, pepper and hot sauce. Pat mixture into 8 patties.

Heat oil in skillet over medium heat. Fry patties until golden brown, 2 to 3 minutes per side. Dollop each cake with a scant teaspoon of sour cream and garnish with chives and reserved bacon.
