Mushroom Strofanoff-no meat

Ingredients

  • 4 T butter
  • 12 oz white mushrooms-cut into quarters
  • 12 oz shitake mushrooms-sliced
  • 1 T flour
  • 1 1/4 C mushroom or vegetable broth
  • 1 t mustard
  • 1/2 C sour cream
  • 2
  • T softened cream cheese
  • 2 T grated parmesan
  • salt/pepper
  • Parsley for garnish
  • Cooked noodles

Directions

  1. Melt butter in skillet and add mushrooms

  2. Cook until mushrooms start to brown

  3. Sprinkle flour over top and stir until you see no more raw flour- about 1 minute

  4. Add broth and bring to a simmer, stirring frequently

  5. Continue cooking until mixture starts to thicken,, about 5-10 minutes

  6. Reduce heat, stir in mustard,, sour cream, cream cheese and parmesan

  7. Cook until warmed through, about 3 more minutes

  8. Season with salt and pepper

  9. Garnish with parsley

  10. Serve over noodles
