Ingredients
- 2 tbsp coconut oil
- 1-1/2 tbsp grated ginger
- 2 tsp minced garlic
- 1 tbsp curry powder
- 1/2 tsp ground cumin
- 2 cups coconut milk
- 16 oz firm white fish (cod, ex) large dice
- 1 cup frozen shredded kale
- 2 tbsp chopped parsely or cilantro
Directions

Heat oil, saute ginger and garlic til fragrant. (Do not scorch). Add curry and cumin, stir again til fragrant. Add coconut milk and bring to a simmer. Add fish and cook approx 15 minutes until just done. Add frozen kale and cook another 15 min on low heat. Finish with parsley or cilantro.
