CHICKEN SCALLOPINI IN SPAGHETTI SAUCE

Ingredients
- 2 chicken breasts
- 1 cups spaghetti sauce
- 1 egg
- 3/4 cups Italian flavored bread crumbs
- 1 tablespoon vegetable oil
- 1 teaspoon garlic, minced
- 4 slices Mozzarella cheese
- Grated Parmesan cheese
Directions

Beat egg with a fork until white and yolk are blended. Sprinkle bread crumbs on a sheet of waxed paper. Dip chicken into egg and then roll in crumbs. Coat both sides of chicken.

In a large skillet heat oil with garlic over medium to medium-high heat. Add meat and saute 4 minutes on each side, until golden brown.

Top each piece of meat with Mozzarella slice. Pour spaghetti sauce around meat.

Bring sauce to a boil and reduce heat. Cover and simmer 5 minutes until cheese is melted.

Sprinkle Parmesan on top.
