Italian Sausage and Bean Soup

Ingredients

  • 3/4 lb. bulk Italian sausage
  • 3 stalks celery, chopped
  • 1 onion, chopped
  • 3 tbsp. tomato paste
  • 3 garlic cloves, chopped
  • 2 tsp chopped fresh rosemary
  • 4 cups chicken stock
  • 15 oz. can cannellini beans, rinsed
  • 1/2 cup white wine
  • Shaved Parmesan and torn basil, for garnish

Directions

  1. In a pot, cook first 6 ingredients over medium-high, stirring often, until sausage is crumbled, 5 minutes. Add stock, beans, and wine. Simmer until thickened, 10 minutes; season. Garnish with cheese and basil.
