Pruitt’s Hot Corn Bread

Ingredients
- 3 C corn meal mix
- 1 T sugar (opt.)
- 2 1/2 C milk
- 3 large eggs
- 1/2 C oil
- 1 onion, finely chopped
- 2 1/2 C Cheddar cheese, grated
- 1 small jar pimentos
- 1/2 C fresh jalapeno peppers or a mix of hot, minced (or more!)
- 1 C or 1 small can creamed corn
- 1/4 lb. bacon, fried and crumbled (can substitute ham, chopped, or sausage, or a mixture)

Directions

Preheat oven to 400F and spray a large baking pan, lasagna pan, with cooking spray.

Mix the first 5 ingredients in a large mixing bowl.

Mix in the rest of the ingredients. Do not over stir as it will go flat.

Pour into the large prepared pan and bake for 35-40 minutes or until done.

Allow to cool in pan for 15 minutes. Turn out onto a large cutting surface in order to cut into squares. Butter if you choose.
