Ingredients
- 2 bread slices - dry, old, and crusts removed
- 1 lb ground lamb
- 1/4 Spanish onion - grated
- 2 garlic cloves - minced
- 1 egg
- 1/2 Tbsp cumin - ground
- 1/2 tsp Turkish red pepper
- 1/2 tsp sumac - ground
- 1/2 tsp paprika
- 1 Tbsp Italian parsley - finely chopped
- 3/4 tsp salt
- 1 1/2 tsp black pepper

Pre-heat grill to very hot temp.

To make kofta, soak bread in cold water briefly, then squeeze excess water and mix with remaining ingredients in a large bowl. Divide meat mixture into 4 portions and form into sausage shape. Refrigerate 30 minutes along with metal skewers (if using).

Grill 5-8 minutes until cooked through. Remove skewers, slice and serve with pilaf or cous cous.
